Ingredients:
1 cup rice 1lb uncooked shrimp 2 cups cream 1/4 cup parmesan 1 cup cherry tomatoes, halved 1 cup chopped spinach leaves 2 tbsp butter 1/2 tbsp garlic 1/8 cup chopped basil Salt & Pepper
Directions
Bring 1 1/2 cups of water to boil. Add 1 cup of rice and lower heat and cover. Cook until rice is tender, or until water has absorbed, about 15 minutes. Remove from heat and let rest for 10 minutes, then fluff with a fork.
As rice is resting, add butter and garlic to a sauce pan. Cook until garlic turns a golden color.
Add cream and parmesan, until sauce thickens. Add halved cherry tomatoes and chopped spinach. Once spinach has wilted add shrimp.
Season with salt & pepper and served over rice.

This is such a light dish, but also fulfills that need for comfort food. The creaminess of the sauce paired with the rice is incredible. Next time I make I might try a risotto, so get creative!
For those that are beginners when it comes to cooking, I would say this is a great option to make, that plates like you're dining at an upscale restaurant! I can't stress enough how important it is for fresh herbs. It really brings the dish together.
