Traditional Jersey Eggs Benny

Prep Time: 5 Minutes

Cook Time: 15 Minutes

Serves: 1


Ingredients:

1 English Muffin

2 slices taylor ham

2 egg yokes

2oz lemon juice (about 1 lemon)

4tbsp butter

2 eggs

1oz white vinegar

2 cups of water

hot sauce & paprika optional


Directions:

Begin boiling water in a pot with vinegar for poached eggs. While waiting, toast 1 english muffin, and grill taylor ham as desired.


Once water comes to a boil, stir in a circle to create a "cyclone". Let cook for 1 minute, and remove with slotted spoon. Repeat process for 2nd egg.


To make the hollandaise sauce, in a double boiler, boil bottom pot, and add lemon juice and butter to top pot. Place on top of bottom pot when water is boiling. Lower heat and stir to melt butter.


Once butter has melted, turn off the burner, and slowly add egg yolks (paprika & hot sauce), continually stiring to prevent cooking the egg but to make sauce thick.


On a plate place english muffins, then taylor ham, top with poached egg, and finally hollandaise sauce.

I get cravings for Eggs Benny after long week, or when I'm super hungry in the morning and want a filling meal!


Hollandaise sauce is tricky, but if you follow my instructions it is easy! If you need to thicken the sauce just add butter as necessary. If you are making a larger portion, just plan for equal parts yoke, butter, and lemon juice.


Taylor ham is a traditional Jersey go-to, but feel free to use avocados, canadian bacon, ham, fish, get creative!
