Salmon, Orzo & Shaved Aspargus Salad

Updated: Feb 20, 2020

Prep Time: 15mins

Cook Time: 20mins

Serves: 1

Ingredients

1/4 Cup Orzo

1 1/2 cups shaved asparagus

(about 6 spears)

4oz salmon

2 tbsp butter

2 tbsp lemon juice

1 tsp garlic

1/2 tbsp grated parmesan

or 1/8 cup shaved

1/2 tbsp oil

Salt & pepper

Dried or fresh parsley

Directions

Boil water, add orzo, and cook to desired taste.

Shave asparagus spears into a bowl. Add 1 tbsp lemon juice, 1/2 tbsp oil, and 1 tbsp grated parmesan. Add salt & pepper to taste, mix well and keep cold until served.

Add 2 tbsp butter to pan on medium heat. Add 1 tsp garlic and 1 tbsp lemon juice. Slightly brown the garlic and remove from heat.

Season salmon with salt & pepper, and add to pan or preheated cast iron. Cook 1-2 minutes on medium heat, both sides and remove from heat.

Add salmon to pan with butter and garlic sauce. On low heat spoon the mixture onto the salmon, to continue to cook the inside of the salmon. Remove from heat after 1-2 minutes. Serve on top of orzo with sauce.

Enjoy!!

So everything in this dish is very easy! Peeling the asparagus for the salad is the most time consuming and challenging. However very rewarding for the amazing flavor profile of the salad. If you are planning on making this dish for a few people, just hope they appreciate the salad as much as you do for what work goes into it!
