Prep Time: 5 Minutes Cook Time: 30 Minutes
Serves: 4
Ingredients:
1 cup carrots
1 cup celery
1 cup onions
2 qts chicken stock or 2 tbsp chicken base
8oz chicken
2 cups dumpling noodles
Salt & pepper
Additional Seasonings (rosemary, thyme, parsley)
Directions:
Bring 2qts of water & 2tbsp of chicken base to boil (or 2qts chicken stock). Add 1 cup of carrots, celery, and onion in 1 minute intervals.
Lower heat and add raw chicken. Cook for 5 minutes. Remove chicken and shred. Return back to pot.
Add salt, pepper and additional seasoning to taste. Add 2 cups dumpling noodles. Continue to simmer until noodles are cooked.

Easy staple recipe that everyone should know how to make. Much better than canned versions. I recommend using rotisserie chicken if you have it to add more flavors!
Noodles can be subsituted with rice, orzo, or zoodles (zucchini noodles). I'm a bit obsessed with my spiralizer so I tend to use it in alot of my recipes.
Besides the carrots, celery and onions, feel free to add other vegetables such as corn or mushrooms.
